Ingredients:
1 lb chicken thighs, skinless and boneless
1 tbsp chili powder
3 tbsp lime juice
1/2 cup chicken stock
4 garlic cloves, minced
1 tsp cumin
1/4 tsp pepper
1 tsp kosher salt
Directions:
1- Add all ingredients into the instant pot and stir well.
2- Cover pot with lid and cook on high pressure for 10 minutes.
3- Allow to release pressure naturally then open the lid.
4- Remove chicken from pot and shred using a fork.
5- Return shredded chicken to pot and stir well.
6- Serve and enjoy.
