Ingredients: 
1 large cauliflower head, cut into florets  
2 garlic cloves, minced  
1 onion, diced  
1 tbsp olive oil  
1/4 cup vegetable broth
3 tbsp tomato paste  
1/2 tsp cumin  
1 tsp salt  

Directions: 
1- Add cauliflower in food processor and process until it looks like rice.  
2- Heat oil in a pan over medium heat.  
3- Add onion and garlic and sauté for 3 minutes.  
4- Add cauliflower rice, cumin, and salt and stir well.  
5- Add broth and tomato paste and stir until well combined.
6- Serve and enjoy.
